Mini Zucchini Muffins

Mini Zucchini Banana Muffins

  • 1 1/2 cups oat flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp sea salt
  • 2 eggs
  • 1/2 cup apple sauce
  • 1 ripe banana (mashed )
  • 1 cup zucchini (grated)
  • 1/2 cup butter or coconut oil (melted )

  1. Preheat oven to 350 degrees

  2. Add the dry ingredients to a bowl and mix to combine.

  3. In a seperate bowl mix together the wet ingredients. Slowly add the dry ingredients to the wet and mix until just combined.

  4. Line a mini muffin pan with liners or grease with coconut oil. Fill until 3/4 way full. Place in the oven and bake for 10-12 minutes.
  5. Store extra muffins in the freezer - reheat in a toaster oven or thaw overnight in the fridge or on the counter the day you want to eat them.
